a question about EVs

If I were trying to catch Regice, and while doing so, it KO'd one of my pokemon, and then I caught it, would my Regice have EVs for it?

My guess is since they already have EXP points when you catch them , then yeah they would also gain EVs for that one battle. But that's only a guess.

thats another thing... would it have the exp from KOing it?

My guess is it would have both the Exp and the EVs from the one battle (or more) that it won before you caught it.

This could be tested now that I think of it. If you could let it KO one of your pokemon first, than catch it (use a Master ball) and check it's EXP on the summary screen. Reset your game and catch it without letting it win a battle, (again use a master ball if you have one). Look at its EXP and compare that to the first. If the first is higher than you got the EXP (and probably the EVs too) from the battle.

EDIT: (this assumes you are going against the same exact pokemon both times, and that it's EXP is exactly the same each time you start to battle it)

I let regice beat my lugia and metang. Both are level 24, yet they managed to get rid of half regices hp, using just surf and confusion. Shows how strong they are. Anyway it has 80000 exp but there's nothing in the bar thing. I restarted, used a master ball, and got the same results.

wobmaster, it actually can because some pokemon give 2 or 3 EVs...
