I thought I saw an email from konami saying that monsters do not have a maximum level
Was that my imagination? Or was it removed for some reason, ness e_e?

there isn't, it just no monster with more than 12 printed level, also some monster has level limitation (fortune ladies).

You don't need an email screenshot. The burden of proof lies with anyone claiming there is a limit. No rulebook, card ruling or anything else posted by Konami has ever said there is one.

Fortune Ladies just have a set max possible Level.
Greed Quasar is the only card that can abuse this "no max Level" on its own, so far.
