Go Go Ho-Oh:

Ho-Oh @ Leftovers / Life Orb
Ability: Pressure
Nature: Adamant
Evs: 252 ATK / 192 HP / 64 Speed
- Sacred Fire
- Earthquake
- Thunder Wave
- Roost

Well, out of all the options for the Rainbow Phoenix, this is the best I could come up with (ATM anyways).

Since most PKMN in Ubers have a high Sp.DEF rather than DEF, Sacred Fire puts a MAJOR Dent into them.

If certain PKMN resist it (Dragons), they can easilly be taken care of with it's other moves / side effects:

Rayquaza: If it's Burned or Paralyzed, it's as good as dead.
Lati@s: If it's Paralyzed, it's as good as dead
Dialga: EQ will send it to UBER Hell.
Palkia: Paralyze / EQ it....however in most cases, get the heck out of there
Giratina: Paralyze / Burn it and get out of there.

The EVs place it at 401 HP...in the event you have to face Seismic Toss Blissey.

Though a defense oriented Ho-Oh can be made, Lugia does that Job much, MUCH Better anyways, so it seemed un-necessary.

NOTE: Though it's uncommon, Stealth Rock can and WILL put a major DENT into the Ho....use with extreme caution and/or prediction (Roost is your friend).
