how much does 1 point increase that stat by. I know its a maximum of 6 but exactly how much does it increase it by?

It's 50%. 2 points is 100%. So a Starmie with 200 DEF and 200 SPDEF used Cosmic Power, it would then have 300 DEF and 300 SPDEF.

The 50% boost works off of the actual stat, not the current value, so if a Salamence with 400 attack Dragon Danced once, it's attack would be 600, after the second DD, it would be 800, not 900.
