I looked through the sites for EV training and I just can't grasp what they mean so for example battling a bunch of Zubats increases my Pokemon's speed?? Where is the EV? I mean I dont know where to look to know how much EV's my Pokemon has. Can someone at least try to help me understand this EV training stuff because i'm going nuts trying to understand it

EVs are simple. Every pokemon in the game is assigned a certain EV that they give when fainted. For example, when your Beedrill faints a zigzagoon, the Beedrill gains 1 EV in Speed.
Here is an easy way to EV a pokemon.
Step one:
Breed or catch a pokemon that you want to EV. Preferrably breed it, as bred pokemon are easier to handle, and you have more control over their growth.
Step two:
Based on the nature of the pokemon you want to train and what it is that you want that pokemon to accomplish in battle (i.e. train a DD-Tar or a non DD-Tar)
Step three:
Split your EVs. All pokemon can only have a set amount of EVs given to them. The max amount of EVs for a single pokemon is 510. The most EVs a single stat can be given is 252. That means that you can only max out EVs in two stats, with six going to another stat. A common EV split is 252, 252, 6.
Also is splitting your EVs, you must decide on which stats to EV. This is where the natures come in. Adamant natures raise Physical Attack at the cost of Special Attack, right? So if you wanted to train a Special Sweeper, you would want to EV Special Attack and Speed, with maybe HP or Defense. You would not want to EV a special sweeper with an adamant nature, as the EVs you give it wouldn't raise its stats to desirable levels, because of the nature defecit.
Step four:
Pick a place to EV. Scattered throughout the game are areas that are filled with pokemon that, for the most part, give off a single type of EV. Example would be the dusty grass by the glass blower's house. In that area is Spinda and Slugma, which give 1 point of Special Attack. Those two pokemon are the most common in that area, thusly it is a good spot to EV Special Attack.
Step five:
Once you know how you want to EV your pokemon and have found a location, you can begin EVing. You need to keep track of how many EVs you give a pokemon. You can do this by either marking it down as tics on a piece of paper (what I do) or by simply remembering how many you are giving.

what's DD-Tar?? im sorry I only know stuff from Silver, Gold, Red, Blue, yellow and Crystal im trying to understand the 3rd generation stuff

DD Tar is a Tyranitar with Dragon Dance paired with Attacking moves like Earthquake and sometimes a slot for the move taunt
