Escape Jutsu makes the target's stats exactly what is printed there. Regardless of how the change is printed. There isn't an errata yet, but they are working on one.

So it would stop Sexy Jutsu guy?

It doesn't stop anything. It just makes the stats on the card equal to what is printed on them. All other changes to the card's stats are undone, be is Sexy Jutsu, Naruto (Nine Tail Chakra) effect, An Outcast's Dream, or anything else.

The exception is Stone Bullet, which resets the original attack. I believe the same goes for The Eight Inner Gates, but I need to check.
