When an attack says that I have to discard a (for example) fire energy and the only energy I have attached to the pokemon is a rainbow energy, do I have to discard the rainbow energy?

Judging by the old wording for rainbow energy (COUNTS as every type of energy) I would say yes, but I noticed that the rainbow energy I have from ruby/sapphire reads "PROVIDES every type of energy".

Yes, you would discard it.
If an energy provides energy of a certain color, it counts as an energy card of that color.

Now, some attacks specify "basic fire energy card".
In that case, Rainbow would not fit since it is not a Basic Fire energy card, it is a Special Energy card.
