I finally understood EVs, thanks to everyone who helped =)

With your Suicune, you gave 252, then 129 and 129 EV's. 129 x 2 = 258. 252 Is the Max. So to Split that evenly it would be 126 x 126 = 252. and Plus, 126 and 129 don't make a difference. Cuz you need 4 EV's to raise the Stat. That's just 3.

the max is actually 255 for a stat and 510 is the max for a pokemon altogether..but you wouldnt waste 3 EVs on a stat to do nothing so thats why people just use 252. And 129 EVs does works..if you need 4 EVs to increase one stat the number you end with should be divisible by 4 and 126 is not. 128 is divisible tho..he just has 129 because you usually have 2 EVs leftover in the end so he just added the last 2 to the two stats with 128. I hope that somewhat made sense =P

Dont worry about messing up 3 ev's It really doesn't matter 99% of the time.
